As a part of our weekly cultural sessions in Darkinjung Homeroom, students were able to engage in an amazing experience thanks to a generous parent who donated a fresh emu egg to our College.
Gathering in the cooking demonstration area, the students learned how emu eggs were traditionally used as a food source. The group carefully drilled open the emu egg and extracted the liquid, keeping the shell intact. To avoid cross-contamination, they innovatively used a pump to extract the egg through the holes, rather than using the traditional method of blowing the liquid out.
The students made emu egg scramble, and all had the opportunity to have a taste – but only if the emu was not a totem of the consumer. They described the flavour as being similar to a chicken egg, but a bit ducky! The group now have a beautiful eggshell that they plan to decorate to share their stories!
